Product details
Izumibashi Kurotonbo Black Dragonfly Kimoto Junmai reflects the brewery’s philosophy of “rice cultivation begins with rice growing,” bringing together Izumibashi’s own rice-polishing and production practices with the work of local farmers. Made with locally cultivated Yamada Nishiki rice, carefully polished in-house using a flat-polishing approach, this distinctive release follows the traditional kimoto method and undergoes more than two years of maturation. Since its introduction in 2011, the Kurotonbo series has continued to honor this time-honored process without relying on specially selected koji or yeast strains. The result is a mature, savory-dry profile with depth and a distinctive sense of character.
Aromas of melon and orange mingle with olive-like nuances, refreshing hints of lime and lemongrass, and subtle matured notes reminiscent of yogurt and anise. The palate offers a fine, smooth texture, gentle rounded sweetness, and clean acidity. Serve alongside sushi with soy sauce or savory sauces, seared foie gras, or Peking duck; gentle warming can further highlight its savory depth.
