Kokuryu Crystal Dragon Daiginjo is a refined sake that exemplifies the artistry of Kokuryu Sake Brewing Corporation, established in 1804 in Fukui Prefecture. The brewery harnesses the soft, pure waters of the Kuzuryugawa (Nine-Headed Dragon River), which originates from snowmelt in the Hakusan mountains, to craft sakes with subtle complexity and elegance. Using locally grown Gohyakumangoku rice polished to 50% and fermented with proprietary yeast, Crystal Dragon undergoes a slow, low-temperature fermentation process, resulting in a sake that balances depth and finesse.
On the nose, Crystal Dragon offers aromas of pear drops, roasted walnuts, hazelnuts, roasted apple, and orange blossom, with a touch of spice . The palate is velvety and smooth, featuring flavors of roasted nuts and a creamy depth, culminating in a long, floral, bittersweet, nutty finish.
