Product details
Crafted in the rugged landscapes of Akita Prefecture by a producer celebrated for bold experimentation, this expression pushes boundaries with three times the usual amount of koji and a blend of ancient red rice alongside traditional white rice. The result is a striking rosé hue, achieved naturally through the use of red-grain varieties and meticulous attention in the cellar. Matured for four years so that principal ingredients can harmonize and deepen, it offers an experience that melds heritage with contemporary flair—intense in character yet refined in presentation.
On the palate it opens with a lush sweetness reminiscent of ripe strawberry and delicate red berry fruit, underpinned by a well-defined acidity that lends freshness and lift. The grain’s natural richness is evident—gentle but full-bodied—with subtle hints of fig and dark cherry woven through the texture. It pairs beautifully with richer red-fish dishes like seared tuna or bonito, lamb chops, roast pork with balsamic glaze, or even a tender pound cake—each combination revealing a new facet of its layered complexity.
