Rooted in the traditions of Shiga Prefecture, this creation comes from one of Japan’s oldest family producers, established in the 1540s. Now guided by Yasunobu Tomita—the 15th generation to carry the legacy—the craft continues to reflect deep respect for the region’s agriculture and community. Tomita works hand-in-hand with a sixth-generation farmer to cultivate a distinctive local rice known as “Ginfubuki,” a crossbreed of Yamada Nishiki and Shiga’s own Tamazakae. This thoughtful collaboration brings forth a refined expression of place, combining centuries-old wisdom with a modern dedication to sustainability and local flavor.
