Yushan Taiwan 6-Year Aged Kaoliang is meticulously crafted by Chiayi Distillery using select kaoliang grains and a refined adaptation of traditional methods. Only the finest cuts of the distillate are selected, then aged for over six years in ceramic jars, resulting in a spirit that is smooth, crystal clear, and rich in aroma. It offers a gentle and refined mouthfeel. Suitable for year-round enjoyment, it is especially delightful when chilled—its clarity remains flawless, and its elegant fragrance slowly unfolds, leaving the drinker refreshed and uplifted.
Following the mass migration in 1949, a deep nostalgia for home grew among those who settled in Taiwan. In search of a comforting, uplifting taste of home, local artisans turned to highland winter wheat, Alishan spring water, and traditional koji-making techniques to craft a unique Taiwanese creation—large bricks of aromatic daqu (fermentation starter). In 1950, Taiwan's first dedicated kaoliang fermentation cellar was established to preserve memory, culture, heritage, and terroir in each ceramic jar. After over six years of aging and masterful blending, this spirit delivers the distinguished five-fold sensory experience of clarity, purity, sweetness, smoothness, and lasting finish, defining the prestige of Taiwan Yuanjiao Kaoliang.
玉山台湾六年陈高由嘉义酒厂匠心酿制,以精选高粱米为原料,融合改良古法技艺,于蒸馏过程中仅取酒液精华,经六年以上酒瓮熟成,成就酒质细腻、晶莹剔透、香气浓郁的优质佳酿。入口柔顺温润,无论四季饮用皆宜。尤其冷冻后,酒色依旧如玉晶莹,缓缓释放出优雅细腻的香气,令人神清气爽,回味无穷。
自1949年大迁徙,众多迁台族群在思乡情怀中寻求精神慰藉,一味熟悉的家乡高粱酒成为心灵的寄托。以阿里山泉水、高山冬麦与传统踩曲工艺为基底,结合1950年设立的首座原窖技艺,台湾酒匠将记忆、文化、族群与风土凝聚在陶瓷酒瓮中,经岁月淬炼与匠人勾调,赋予“台湾原窖高粱酒”独有的清、正、甜、净、长五感层次,展现台湾高粱酒的尊贵与风味传承。
The liquor is crystal clear and brilliantly transparent, with no sediment or suspended particles, showcasing exceptional purity. Its aroma is gentle and natural, with a soft, sweet complexity—initially subtle, then gradually unfolding into a rich, savory fragrance that lingers gracefully. The body is smooth and delicate, full and mellow, with evenly dispersed, well-formed alcohol beads that reflect its refined structure. 此酒酒色清亮透明,晶莹剔透,毫无悬浮物或沉淀,展现出极高的纯净度。香气柔和自然,细腻醇甜,初闻即有酱香扑鼻,层次分明,悠然飘逸。酒体绵柔细致,醇厚而不失顺滑,酒花均匀饱满,展现出良好的结构感。入口醇爽柔顺,无刺激感,口感舒适宜人,甜润中带有丰富的香气,余韵悠长,令人回味无穷。
Chiayi Distillery meticulously adheres to a centuries-old method of solid-state fermentation. It begins with crafting large daqu bricks—a blend of wheat, barley, and peas—fermented over 2–3 months, then aged for another 3 months to develop rich microbial diversity. These bricks are then crushed, mixed with steamed local sorghum, and allowed to ferment in a clay cellar at low temperatures for about a month.
Following fermentation, the mash undergoes double distillation with “cut head and tail” techniques, retaining only the finest mid-distillate for its smooth, pure character. The distillate is then aged in ceramic urns, where long-term maturation balances and refines flavors into the crisp, aromatic kaoliang Chiayi is renowned for. This rigorous combination of artisanal koji preparation, solid-state fermentation, precise cut-distillation, and ceramic aging results in a kaoliang of exceptional clarity, depth, and regional character—a true distillation of Chiayi’s heritage and terroir.
嘉义酒厂延续传统的固态发酵工艺,采用纯粮酿造,以高粱为主要原料,并使用大曲进行发酵。大曲由小麦、豌豆等原料制成,经2至3个月的自然发酵,再静置熟成3个月,以培养丰富的天然微生物群。制成的大曲经破碎后,与蒸熟的高粱混合,在低温环境中于红砖窖池中发酵约一个月。
发酵完成后,采用“掐头去尾”的传统蒸馏技术,保留中段最精纯的酒液,再置入陶瓮中长期储藏陈熟。经过岁月的淬炼,酒体风味逐渐平衡,展现出清香纯净、酒质细腻的在地特色,完整呈现嘉义酒厂原窖工艺的精髓与风土韵味。
Hinoki Forest
40ml Yushan Taiwan Yuanjiao Kaoliang Liquor, 10ml elderflower syrup, 15ml fresh cucumber juice, 10ml fresh lime juice, a few mint leaves
Add all ingredients with ice into a shaker and shake vigorously. Strain into a chilled martini glass. Garnish with a mint sprig or a slice of cucumber.
