A beautifully dry and spicy sake, slightly nutty, with the characteristic Shishi no Sato clarity. Pairs beautifully with the “mountain cuisine” of rural Ishikawa, smoky dishes of grilled game meats, miso based stews, braised daikon radish and river trout.
Delicate sweetness is balanced by fine bubbles laced through the sake, making for a refreshing and lively low ABV sake. Light bodied and refreshing, low ABV of 13% makes for an ideal hot weather sake.
Fresh fruit and slight floral notes with a touch of sea breeze salinity. Its mouthfeel is clean and slightly briny. The tasting notes reveal a refreshing fruity aroma upfront, followed by cleansing acidity and a slight briny, mineral finish.
A sharp and solid tokubetsu junmai sake brewed with the time-honored Kimoto method - a way to produce sake's mother yeast starter that takes extra time, labor, and experience, but yields immensely well-structured and umami-rich sake.
A refreshing fruity aroma of white peach, pear, muscat, and grapefruit. This sparkling sake with natural carbonation is obtained after secondary fermentation in the bottle, elegantly harmonized with citrusy notes and creamy and delicate bubbles.
This versatile sake can be enjoyed chilled, where its intricate flavors shine, or gently warmed to deepen its flavors and enhance its sweetness. The use of medium-hard Hakusan underground well water contributes to its unique character.

Made from the heirloom Omachi rice, this lightly off-dry and fragrant Junmai Daiginjo is brewed using traditional methods. All of the rice is sourced close to the kura, and the rice is grown with the same water used to brew.
