Dassai Hayata is made with minimum pasteurization by adding micro-bubble carbon dioxide to keep fresh aroma and flavor. It has the notes of Williams pear and white pepper. This is a restaurant-only sake which can only be sold in minimum quantities.
This sake is served at the Imperial Court and is partly what brought Katoukichibee Shouten fame during the Showa period. It’s no wonder that this sake is shipped to the US in limited amounts.
