Shichi Hon Yari Junmai Daiginjo Shizuku is an exceptionally refined rice-crafted expression produced by the historic Tomita Brewery, one of Japan’s oldest family-run producers with roots tracing back to the 1540s. Now guided by the 15th-generation head and brewmaster Yasunobu Tomita, the house continues a legacy deeply connected to the region’s history. The name “Shichi Hon Yari,” meaning “Seven Spearsmen,” honors the warriors who played a decisive role in the nearby Battle of Shizugatake. This special “Shizuku” release is crafted using a rare free-run method in which the finished mash is placed into cloth bags and allowed to drip naturally under gravity rather than being pressed. Only the pure middle portion of these collected drops is selected, creating a remarkably elegant and nuanced profile that reflects both patience and craftsmanship.
On the palate, this expression displays the ethereal texture associated with the shizuku method while maintaining the signature character of Shichi Hon Yari—structured, bright, and gently dry. Aromas open delicately with soft grain tones and subtle richness, gradually revealing notes reminiscent of warm brown butter and lightly toasted elements.
