Brewed by Koimari Shuzō in Imari, Saga Prefecture—an area celebrated for Ko-Imari porcelain since the 17th century—Koimari Saki Oyama Nishiki Junmai Ginjo represents a modern twist on centuries-old tradition. Established in 1909, the Maeda family transitioned from merchants to brewers, crafting sake with local rice and Arita porcelain-filtered spring water—known for its purity. This Ginjo-grade sake is made from Oyama Nishiki rice polished to 55%, fermented slowly at cold temperatures, and bottled undiluted (genshu) to preserve its full character and robust 17% ABV.
