Senkin Immortal Wing “Kamosu” represents the pinnacle of the “Domaine Senkin” philosophy—handcrafted sake that truly expresses terroir. Brewed in small batches by brothers Kazuki (brewer) and Masato Usui at Senkin Shuzo, a sake brewery founded in 1806 in Sakura City, Tochigi Prefecture, the team sources three heirloom sake-rice varietals—Yamada Nishiki, Kame no O, and Omachi—all grown within five kilometers of the kura using the same groundwater used for brewing. The term “Kamosu”, drawn from the French “assemblage” tradition, refers to expertly blending separate batches made from each rice type—polished to 7% (Yamada Nishiki), 35% (Kame no O), and 40% (Omachi)—with local yeast and spring water. Post-fermentation, the sake is pressed via the gentle “fukurotsuri” (gravity drip) method to ensure purity of aromatics and clarity.
The tasting experience is a graceful symphony: refined aromas of white flowers, grape, and pear open into a silky, medium-bodied palate that balances delicacy and depth.
