Mimurosugi Yamada Nishiki Junmai Ginjo hails from the historic Imanishi Brewing Company, founded in Miwa, Nara Prefecture in 1660. Nestled beside ancient Mt. Miwa—Japan’s revered “god of sake” mountain—the brewery continues a centuries‑old tradition of sacred sake-making, especially for Omiwa Shrine. Brewing is done in small, meticulous batches, drawing on pure groundwater from Mt. Miwa and locally grown Yamada Nishiki rice under contracts with nearby farms. Praised for their focus and precision, Imanishi expertly mills the rice to 60%, then employs low-temperature, slow fermentation to coax out the natural rice flavors alongside gentle ginjo aromatics.
On the palate, this Junmai Ginjo greets the senses with a refreshing, nostalgic “Ramune”-like ginjo aroma, followed by a pure, clean structure and crisp acidity. It balances moderate body with juicy umami, avoiding off-flavors for a seamless sip. More expressive tasting notes highlight apple, lychee, cotton candy, honeydew, white grape, tropical fruit, and subtle caramel undertones in a slippery-soft mouthfeel.
