Unlike many modern Junmai Ginjo sakes that favor light, sweet, and highly fruity profiles, Kamoizumi deliberately stands apart. They mill their rice less aggressively than most to maintain a rich, intensely savory flavor, and they skip the standard carbon-filtration process. This gives the sake a faint, natural golden hue and preserves its deep, complex character.
Aroma: Complex and split between woody, earthy elements and sweet autumn aromas—think roasted nuts, shiitake mushrooms, dried prunes, and a hint of warm baking spices.
Palate: Full-bodied and exceptionally rich. It hits the tongue with a massive wave of savory umami and a pleasant, tart acidity.
