Product details
This handcrafted seasonal expression comes from a small, family-run workshop established in 1939 in the historic town of Izumo, home to one of Japan’s oldest and most revered shrines. Guided by the third generation of the Imaoka family, production is carried out with traditional, hand-done methods rather than modern machinery. Grains are steamed carefully, cultivated slowly, and separated using a gentle wooden vat process that preserves natural character and depth. The name pays homage to both Mt. Fuji and the sacred Izumo Taisha, which is believed to bring strong, lasting bonds between people.
The aroma is softly floral, with hints reminiscent of violet drifting above deeper notes of ripe plum. On the palate, the texture unfolds with calm confidence—smooth, expansive, and quietly layered. A subtle savory depth anchors the flavor, finishing with a clean dryness that enhances food rather than overwhelming it. It adapts beautifully to different serving temperatures and pairs especially well with richly flavored dishes such as slow-cooked stews, grilled meats, and briny shellfish, making it an elegant companion to gatherings and shared meals.
