Adding to its uniqueness, the proprietary AA41 yeast has undergone extraordinary journeys—four months 6,200 meters below sea level and ten days 400,000 meters above the earth—imbuing it with an exceptional character. This expression embodies the region’s local pride while reaching for horizons beyond Japan.
