Now led by the 13th-generation Kato family, with Ariyoshi Kato at the helm and head craftsman Kodai Kato, the house continues to balance centuries-old discipline with youthful innovation. Its name, meaning “ten thousand ways,” embodies both the technical and emotional breadth of the craft: the countless variations in yeast, koji, timing, and care that shape each unique expression, as well as the versatility that allows it to be enjoyed across temperatures and cuisines, from delicate fare to richly seasoned dishes.
