Ichinokura Himezen “Princess” Junmai Sake is a pioneering low-alcohol sake crafted by Ichinokura Brewery, situated in the forested hills of Matsuyama, Miyagi Prefecture. Founded in 1973 through the merger of four local breweries, Ichinokura was established with the vision of revitalizing the sake industry and promoting a sophisticated and vibrant sake culture. Himezen, introduced in the 1980s, was developed to appeal to a broader audience, including those new to sake, by offering a refreshing and approachable profile. Brewed using 90% locally sourced rice and pristine underground water, this sake embodies the brewery's commitment to quality and regional authenticity.
Himezen presents a vibrant balance of sweetness and acidity. Tasting notes reveal bright citrus flavors, including orange zest and Meyer lemon pith, complemented by a clean, refreshing finish reminiscent of a Kabinett Riesling.
