Born from a long, patient pursuit of clarity and depth, this release traces its roots to Takagi Shuzo of Jyuyondai, who perfected the Mirai variety after 18 years of careful selection. Mirai — a cross of Yamasake No. 4 and Miyama Nishiki — was chosen for its unusually clean profile and low incidence of off-flavors (zatsumi), qualities that invite a subtler, more transparent expression. Here, the producer intentionally employed the Kimoto method and allowed a longer resting period of roughly six months before release, a departure from the usual rapid turnaround. The result is a refined, restrained offering that balances precision with a gentle, lasting presence, one that opens slowly and rewards patience.
On the palate, the character is fresh and green at first impression, with a softly creamed texture that carries delicate vegetal and floral echoes. Gentle gas gives a lively lift, while ripe orchard fruit and a citrus peel bitterness provide structure and interest. The midpalate displays a pleasing umami roundness that speaks to Mirai’s inherent depth, and the finish is creamy and lingering, leaving a tranquil aftertaste. Best enjoyed chilled, it pairs beautifully with a fragrant chicken tagine, simply grilled asparagus, or chilled shrimp cocktail.
