Founded in 1918 in Fukushima Prefecture, Homare Sake Brewery is located at the base of the revered Iide Mountain, benefiting from the region's exceptionally soft water and high-quality rice from the Aizu district. The brewery's name, "Homare," meaning honor or renown in Japanese, reflects the founder Kosaku Karahashi's aspiration for the brewery to be recognized as a distinguished sake producer in the Aizu area.
Tatsumigura Junmai Daiginjo is crafted with great care, using Gohyakumangoku rice polished to 50% and fermented at low temperatures. The sake is single-pasteurized and stored at -5°C (32°F) to maintain its freshness. The tasting experience is marked by a crisp, fruity nose reminiscent of apples and pears, with a flavor profile that is dry, clean, and as gentle as spring water. It pairs exceptionally well with grilled fish and chicken.
