Founded by Scottish native Graeme Wallace, the distillery combines traditional Scottish whisky-making techniques with Colorado's unique terroir. Barrel #15, released in 2023, is crafted from 100% peated malted barley sourced from Scotland. The whisky matured for four years in ex-rye American oak barrels before undergoing a nine-month finish in a Cabernet Sauvignon barrel from Napa Valley's Continuum Estate.
This expression offers a nuanced tasting experience. On the nose, it presents light phenolic notes intertwined with pine, earthy, and grassy aromas, accompanied by subtle medicinal and salty hints.
