After its initial maturation, the whisky is finished in puncheons and hogshead casks that previously held Palo Cortado Sherry, one of the rarest Sherry styles, known for combining the aromatic finesse associated with Amontillado with the structure and richness of Oloroso. The result is a layered expression that brings together ripe plum, dark mocha, and warming cinnamon spice. Presented in its natural colour and without chill filtration, this limited-edition release preserves the character developed through its carefully selected cask finish.
The nose opens with cinnamon spice, butterscotch, and damson plum, complemented by heather honey, raisin butter, and crystallized ginger. On the palate, toasted honeycomb and fresh brambles lead into baking spices, maraschino cherries, mocha, and plum jam, with treacle and chocolate adding further depth and richness. The combination creates a richly layered profile with a pronounced Sherry-influenced character and warming spice notes throughout.
