The nuanced nose includes notes of salted Asian pear, sweet custard, orange creamsicle, subtle banana, and jasmine. The gently mouthwatering palate has a creamy mouthfeel and a very fine, silky texture with flavors of melon, vanilla, banana, and cream.
This brew is made using proprietary house yeast that helps develop a plethora of delicate aromas. The result is a sake with a mixture of flower petals and light mineral touches on the nose.

Kijoshu is made by incorporating sake instead of water during the last step of fermentation, lending a sweeter, richer, and more concentrated flavor, similar to noble rot wine.
Although from a reputable brewery from a very historic region, this is not your typical junmai daiginjo. On the palate, it has a layered depth from the Omachi rice grown in Bizen-no-kuni in Okayama prefecture — the birthplace of this heirloom strain.
This sake is stored in cedar barrels made in house at Kikumasamune, using cedar from sustainably maintained Yoshinosugi area. The flavor is a bit smokey with umami in the front and some lingering spiciness in the back.
