Shiokawa Nopa Junmai is an innovative Japanese rice-based beverage created by Shiokawa-san after years of experience working with rice fermentation in six countries, from Northern California to Indonesia. Inspired by a desire to express climate, place, and the natural character of the ingredients, Nopa represents an exploration of how traditional assumptions can be reexamined in response to changing environmental conditions. Each batch is made with rice from Niigata that is polished only to 90%, minimizing waste while preserving more of the grain's original character. Fermented with wild yeast, without temperature control, and over the course of three seasons, Nopa reflects a thoughtful approach that seeks a genuine expression of time, climate, and terroir.
The palate is bright and mouthwatering, offering notes of lemon custard, papaya, and kumquat, followed by hints of black pepper. Mid-palate layers of yogurt, nuts, and fruit add texture and complexity, while the finish is marked by clean, pronounced acidity. This distinctive profile pairs especially well with chicken mole negro, Iberico ham, blue cheeseburgers, roasted pork, and richly flavored contemporary cuisine that can complement its vibrant acidity and layered character.
