Senkin Immortal Wing Classic Muku Junmai Daiginjo is a testament to the harmonious blend of tradition and innovation from Senkin Brewery, established in 1806 in Sakura City, Tochigi Prefecture. Under the leadership of 11th-generation brewer Kazuki Usui, a former sommelier, Senkin embraces a "domaine" approach, utilizing locally grown Yamada Nishiki rice and brewing with the same water that irrigates the rice fields, ensuring a true expression of terroir. The "Classic" series, to which Muku belongs, is crafted using traditional methods, reflecting the brewery's commitment to preserving the essence of sake-making heritage while catering to contemporary palates.
This Junmai Daiginjo offers bright and refreshing flavors reminiscent of lychee and cranberry, delivering both umami and acidity to the palate smoothly and naturally. Its crisp character and balanced depth make it an extremely versatile and complex sake that pairs well with a variety of foods. Recommended pairings include trout meunière, minced cod, deep-fried goby fish, grilled sand-smelt with salt, bigfin reef squid sashimi, poached greens with soy sauce, seared chicken breast tataki with plum, soba, vinegared octopus, thinly sliced flounder sashimi with ponzu, and deep-fried freshwater shrimp with lemon. To fully appreciate its nuanced flavors and aromas, the brewery suggests enjoying this sake chilled in Bordeaux wine glasses, enhancing its sensory potential.
