Product details

The Aromas (The Nose)
  • Aged Earthiness: The nose opens immediately with wild, savory aromas, featuring deep notes of cremini mushrooms and black truffles.
  • Mellow Fruit: Layered beneath the savory notes are subtle, ripe scents of baked pear, persimmon, and melon rind.
  • Grain Notes: Gentle hints of toasted rice and light autumn spice add warmth to the aroma.
The Palate (The Taste)
  • Texture & Weight: Highly texturally driven. The local Koshi Tanrei rice gives it an incredibly smooth, glossy, and plump entry that becomes remarkably silky from bottle maturation.
  • Flavor Profile: It delivers a moist, mellow flavor profile packed with complex umami. Clean stone fruit and toasted grain notes are wrapped around a dry core.
  • Structure: True to the Niigata tanrei karakuchi style, it features a clean, streamlined precision. It has a Sake Meter Value (SMV) of +3 and a bright acidity of 1.4, keeping the mid-palate lifted and balanced.
The Finish & Serving
  • The Finish: It concludes with a soft, moderately ripe, and lingering finish that tapers off cleanly without heavy cloying sweetness.
  • Serving Temperature: Extremely versatile. It can be served lightly chilled at 15°C (59°F) to emphasize its fruit and structure, or gently warmed to 40°C (104°F) to fully amplify its rich umami.
  • Food Pairings: Built to accompany rich, hearty seasonal cuisine. It pairs exceptionally well with grilled hamachi collar, roasted chicken, or lightly smoked duck breast.
