This Blue Stag 7 Junmai is a distinguished creation from Kikusui, the sole sake producer in Iida City, Nagano Prefecture. Established in 1944 through the consolidation of 37 local houses, Kikusui has a rich heritage of crafting beverages that reflect the essence of their mountainous region. The Blue Stag 7 is produced using Takane Nishiki rice, a revived local variety, polished to 82% using the Henpei method. This meticulous process retains essential starches while removing excess proteins and fats, resulting in a beverage that is both rich and refined. The water used in production is sourced from the Central Alps, known for its purity and quality, further enhancing the final product.
On the nose and palate, Blue Stag 7 offers unique notes of marzipan, plantain, and palm leaves. When served chilled, it delivers a crisp finish with refreshing acidity.
