High West Distillery—Utah’s trailblazing whiskey maker since its founding in 2007—continues its evolution from blending expert to distilling authority with the release of its 2025 Bottled in Bond Bourbon. This marks the first instance of the distillery crafting an in-house bourbon under the stringent Bottled-in-Bond Act of 1897, which mandates that the spirit be distilled in a single season by one distiller, aged at least four years in a federally bonded warehouse. Distilled in Wanship, Utah—4,000 feet above sea level—and matured for four years and five months, this bourbon boasts a mash bill of 64% non-GMO yellow corn (from Colorado) and 36% rye (from Idaho), fermented across three yeast strains—including the distinctive S. diastaticus—to build complex aromatic and flavor layers.
On the nose, expect a richly inviting aroma: Honeycrisp apple, golden raisins, zested kumquat, graham-cracker crust, wildflower honey, malted-milk chocolate, toasted oak spice, and the cozy sweetness of honeycomb in a wicker basket. The palate continues this sensory journey with warm, comforting flavors of peach and cherry cobbler, gingersnaps, roasted marshmallows, puffed-wheat cereal, cocoa nibs, molasses, dried thyme, and a hint of charred barrel staves. The finish offers an elegant finale, reminiscent of financier cakes, grated almonds, and brown butter, creating a long-lasting impression of warmth and finesse.
