The producer is based in Yamagata Prefecture, using rice of the old “Kame-no-O” strain, a legendary variety discovered around the turn of the 20th century in the Shonai Plain. The rice is polished down to about 55 %, enabling expressive clarity while keeping enough of the grain’s body for depth. This version is undiluted (“genshu”), resulting in a full weight that showcases both richness and purity. Careful handling during each stage preserves natural texture and character.
On the nose, there is a gentle earthiness of mushroom mingled with melon musk, and a faint charcoal note that adds intrigue. The palate reveals layers of clean grains, firm umami, and refreshing clarity. Flavours of melon and soft white fruit intertwine, with a fine-grained finish that lingers pleasantly, neither sharp nor heavy.
