Dassai Composing the Future Junmai Daiginjo is a limited collaborative release from Dassai that celebrates cultural exchange between Japan and Austria through the universal language of music. Inspired by a chance encounter with Dassai at a sushi restaurant in Vienna, the project grew into a symbol of friendship showcased in connection with the 2025 Osaka–Kansai Expo. Produced by Asahi Shuzo, a brewery renowned for its dedication to premium rice craftsmanship and innovation, this special edition reflects Dassai’s philosophy of respecting cultures around the world. During production, the fermentation tanks resonated with Johann Strauss II’s Lagoon Waltz, performed through a unique collaboration between members of the Vienna Philharmonic and the Japan Century Symphony Orchestra. The commemorative label features the musical score of the waltz alongside the orchestras’ logos, highlighting this one-of-a-kind international partnership.
According to the producer, the musical resonance during production contributed to a smoother, more refined flavor, resulting in a distinctive expression within the Dassai collection. The emphasis is on its polished, elegant character and the unique story behind its creation. This special release pairs beautifully with sushi, sashimi, fresh seafood, delicate white fish, lightly seasoned poultry, and other refined Japanese or contemporary dishes, allowing its graceful profile to complement subtle flavors.
