Product details
Chochin Junmai Nama Genshu Yamadanishiki 65 is a bold seasonal release from Chochin, a historic producer founded in the late Edo period in Tsushima City, Aichi Prefecture. The name “Chochin,” meaning “long cherished rarity,” reflects the founder’s aspiration to craft a beverage that would be treasured across generations. Part of the limited-distribution “Newspaper Series,” each bottle is wrapped in newspaper to protect it from light and preserve its integrity. Made with Tokushima-grown Yamada-Nishiki rice polished only to 65%, this unfiltered, unpasteurized expression is designed to showcase the fullest depth of rice character. With minimal polishing to retain umami richness and remarkable aging potential, it stands as a powerful and distinctive example of traditional craftsmanship with a daring edge.
On the nose, it opens with seductive notes reminiscent of cherry clafoutis, cherry chutney, and five-spice braised pork belly. The palate is indulgent and intense, evoking impressions of toffee-covered custard and bittersweet chocolate truffle with just a touch of sweetness. A vibrant acidity emerges after each sip, creating a mouthwatering lift while a lingering essence of kuromitsu-like brown sugar syrup unfolds. Hints of mamey, cocoa, and peach purée add depth, while subtle mineral dryness and a cola-like cherry nuance keep the structure upright and focused. Rich yet thoroughly dry, powerful yet beautifully balanced, this is a captivating and expressive release that rewards contemplation and confident palates.
