Product details
Crafted in Japan’s northern Tohoku region, Akitabare reflects generations of dedication to purity, balance, and patience. This Suirakuten Reserve has been carefully matured in bottle for two decades under controlled cool conditions, allowing time to shape its character with remarkable grace. Produced in small lots with extensive hands-on attention, it follows a slow, low-temperature fermentation period before pressing, ensuring clarity and structural precision. Much of the brewery’s equipment has been in continuous use for nearly a century, underscoring a deep respect for tradition. The result is a rare, long-aged expression with a luminous golden hue, offering exceptional depth and refinement born from time.
On the palate, extended maturation reveals layered richness and quiet elegance. Notes of dried fig and golden honey unfold gradually, supported by a smooth, rounded texture and harmonious balance. Subtle savory undertones add dimension without overpowering its poised structure. The finish is lingering and composed, making it an excellent companion to refined dishes such as scallop, sea urchin, freshwater eel, ankimo, or pâté, and equally enjoyable when savored slowly at the close of a meal.
