Chochin Junmai Ginjo Nama Genshu 5055 is a celebrated seasonal release from Chochin, a historic producer founded in the late Edo period in Tsushima City, Aichi Prefecture. The name “Chochin,” meaning “long cherished rarity,” reflects the family’s aspiration to create a brew treasured across generations. Released each November, the popular “5055” edition is crafted using Hyogo-grown Yamada-Nishiki polished to 50% for koji rice and Hiroshima-grown Hattan-Nishiki polished to 55% for the main mash. This unfiltered, unpasteurized expression is pressed in early spring, then matured for approximately seven months in refrigerated tanks before bottling and resting further to achieve harmony. Part of the limited “Newspaper Series,” each bottle is wrapped to protect it from light, preserving its integrity and character.
On the palate, 5055 balances the lively freshness of a new release with the graceful roundness developed through careful maturation. Bright fruit tones and subtle rice sweetness are layered over a structured, full-bodied core, delivering both vibrancy and depth. The texture is rich yet composed, with a clean, focused finish that highlights its refined balance.
