Veuve Fourny et Fils’ Blanc de Blancs Brut Nature Premier Cru is a testament to five generations of winemaking in the heart of Vertus, a Premier Cru village in Champagne’s Côte des Blancs. Founded in 1856, the estate is now led by brothers Charles-Henry and Emmanuel Fourny, who uphold a philosophy of precision, purity, and sustainability. Crafted exclusively from hand-harvested Chardonnay grapes grown on 40-year-old vines rooted in chalky rendzina soils, this cuvée is a blend of three consecutive vintages, incorporating 20% reserve wines. Fermentation occurs in a mix of stainless steel vats (75%) and oak casks (25%), followed by seven months on lees before bottling. The wine then matures in the estate’s 19th-century cellars, benefiting from a low and constant temperature. With no dosage added, this Brut Nature Champagne showcases the unadulterated expression of its terroir.
On the nose, the Blanc de Blancs Brut Nature reveals aromas of floral notes and citrus fruits. The palate is elegant and mineral-driven, offering flavors of green apple and ripe citrus fruits, underlined by a light oaky touch. The wine's ample body and beautiful length culminate in a saline finish. Its crisp and fresh profile makes it an ideal aperitif and a perfect companion to seafood dishes, such as sushi and sashimi.
