The Macallan TIME : SPACE Sherry Cask is a 20 Years Old single malt shaped by two distinct interactions with freshly sherry-seasoned oak, creating a second chapter of cask influence within its maturation journey. It began its journey at The Macallan Estate in Speyside, where the character was developed through a selection of sherry-seasoned oak casks, before undergoing a distinctive marrying period in a selection of the first 200 sherry casks seasoned at The Macallan’s Valdespino bodega in Jerez de la Frontera, Spain. Crafted in The Macallan’s cooperages and seasoned in Jerez, these casks arrived at The Macallan in 2024 as part of the brand’s 200th anniversary celebrations. As the third chapter in the TIME : SPACE Collection, the expression is presented in a distinctive circular vessel that reflects the continuous passage of time, while the presentation box draws inspiration from Palomino grapes and the golden Andalusian landscape of Jerez. Together, the whisky and presentation celebrate The Macallan’s longstanding connection with sherry-seasoned oak, Valdespino, and the craftsmanship behind its distinctive cask character.
The nose brings together sherry-soaked raisins, figs, and Medjool dates with sweet frangipane, cinder toffee, caramelised nuts, and dark chocolate truffles, complemented by cinnamon, star anise, and ginger. The palate is opulent and complex, combining sultanas, dates, apricots, rich ginger cake, treacle toffee, bramble jam, and chocolate-coated cherries, followed by cloves, cinnamon sticks, cocoa nibs, and polished oak. The finish develops warming wood spices, a hint of espresso, and gentle oak.
