Now widely used, the process of cask finishing was developed in the 1980s by Balvenie’s Malt Master David C. Stewart. He discovered that finishing a whisky in Oloroso sherry casks brings incredible layers of flavour, depth and complexity. The first cask finished single malt, The Balvenie Classic, was introduced in 1983.
Balvenie The Creation Of A Classic pays homage to David C. Stewart and his revolutionary invention. The single malt first matured in American oak casks, followed by a finish in sweet Oloroso Sherry casks. It was released in 2021 as part of The Balvenie Stories range.
Balvenie The Creation Of A Classic is a sweet and syrupy whisky with a touch of vanilla oak and ginger spiciness. The nose is lively with aromas of vanilla, dried clove and chai layered on a base of earthly, malty undertones. The palate has a beautiful balance of light oatmeal syrupiness and brittle toffee, followed by delicate hints of spice and a rich drying sensation from European oak. The finish is lingering with dry oak.
