Tanaka 1789 x Chartier Pavillon of Blend 001 is a pioneering sake that marries centuries-old Japanese brewing tradition with innovative blending techniques inspired by the world of fine wine. Crafted by Tanaka 1789, a Miyagi-based brewery established in 1789, this Tokubetsu Junmai sake is the result of a collaboration with François Chartier, a renowned Canadian sommelier and master blender. Chartier introduced the concept of blending to the sake world, drawing parallels with practices in Bordeaux wines and Champagnes. The Pavillon of Blend 001, introduced in 2019, serves as a more accessible counterpart to the flagship Blend 001, offering a rich, full-bodied profile designed to be enjoyed young. It is crafted using a blend of Miyamanishiki, Kuranohana, and Gin no Iroha rice varieties, polished to 60%, and employs traditional kimoto and yamahai methods to enhance its complexity and depth.

This sake opens with dominant aromas of mango, almond, milk, and butter, creating a rich and enticing nose. On the palate, it delivers a full-bodied mouthfeel that is rounder, softer, and more enveloping than the original BLEND 001, offering a refined and luxurious drinking experience. The lingering flavors reveal elegant notes of peach, coconut milk, and a hint of anise, adding layers of depth and charm. Similar to BLEND 001, this second label was also crafted with food pairing in mind, offering a wide range of possibilities due to its dual aromatic profile and round, seductive texture reminiscent of new world chardonnay wines.
