Kanchiku Junmai Daiginjo is a refined sake produced by Totsuka Shuzo, a historic brewery founded in 1653 in Nagano Prefecture, Japan. The name "Kanchiku," meaning "winter bamboo," reflects the sake's elegant character and the brewery's commitment to tradition. Utilizing locally sourced Miyamanishiki rice polished to 49% and pristine underground water from the Yatsugatake Mountains, the sake is brewed during the sub-freezing months, around minus 15°C, to achieve the toji's ideal brew. On the palate, Kanchiku Junmai Daiginjo offers a smooth and clean taste with subtle hints of flowers and tea. It is on the dry side for a Daiginjo but possesses a complex flavor profile.
