The name refers to the original well dug in 1408. The history of the distillery itself goes back about 600 years and is the longest continuous Baijiu-making distillery in China. In 1998 they renovated the distillery and the unearthed a large, ancient distillery. They excavated the cellars and extracted bio-cultures which are now part of the fermentation process. They also have an amazing collection of distillers yeasts that go back over 600 years and their mud-lined fermentation pits contain wild yeast cultures from this 600 year old distillery. This means every sip can be considered related to those enjoyed by the ancient dynasties. The Phoenix and Dragon are limited edition bottligns. In Chinese culture, the Phoenix represents ying & yang, high virtue and grace and eternity. The Dragon represent potent powers, strength and good luck. This Baijiu is categorized as a Strong Aroma Baijiu which is considered the most popular of the Baijiu styles. There are two variations of Strong Aroma - simple grain and mixed grain. Shui Jing Fang is considered mixed grain with its blend of sourghum, rice, wheat and corn. The flavors are full flavored and a fruitiness of pear and plum. Intense yet smooth. Mainly drunk neat but can also be used in cocktails. Perfect with Sichuan cuisine.
