Product details
Nestled in the serene town of Kinomoto in Shiga Prefecture, the Tomita Brewery has been a hallmark of craftsmanship since the 1540s. This edition embodies the brewery’s signature approach, blending centuries-old tradition with modern refinement. Named “Seven Spearsmen” in tribute to legendary warriors from the nearby Battle of Shizugatake, it is made from the indigenous Tamazakae rice and mineral-rich waters of the Ibuki Mountains. With a polished rice ratio of 60%, it presents a balance of richness and elegance, highlighting earthy complexity while maintaining a smooth, approachable character that bridges heritage and contemporary style.
The profile opens with earthy, dried mushroom aromatics that give way to a creamy, viscous texture. Bright grapefruit notes emerge on the palate, providing a lively contrast to the weight and softness, while the finish is crisp and refined. Its bright acidity and layered flavors make it versatile for pairing with a wide range of dishes, from mushroom risotto and nutty cheeses to heartier options like stews, duck a l’orange, or Korean steak tartare. Enjoy it at room temperature or gently warmed to fully appreciate its dynamic character and harmonious balance.
