Mimurosugi Junmai Daiginjo Tsuyuhakaze is a distinctive Japanese rice beverage from Imanishi Shuzo, a historic brewery in Nara Prefecture renowned for expressing the character of local rice and traditional craftsmanship. This release is crafted exclusively with Tsuyuhakaze, a heritage rice variety known for its naturally complex character. Because of its large starch core, the rice can be polished to a maximum of 50%, a challenge the brewery embraced to reveal its full potential. After pressing in April, the beverage is carefully bottle-aged at 5°C until it develops greater roundness and harmony before release, reflecting Mimurosugi's philosophy of precision, patience, and respect for the qualities of its ingredients.
