Mayacamas Vineyards, founded in 1889 and nestled high in the rugged Mayacamas Mountains on the Mt. Veeder AVA, has long been celebrated for its traditional, mountain-driven Cabernet style. The 2020 vintage is crafted from 100% organically-farmed Cabernet Sauvignon, grown across eleven estate blocks and one grower block at elevations between 1,800–2,400 ft . Grapes are hand-harvested in the cool morning, gently sorted, and fermented in a blend of concrete, stainless steel, and oak vessels at conservative temperatures (~78 °F), with a maceration lasting approximately 16 days. It then undergoes a classical élevage—20 months in neutral foudre and puncheon followed by 12 months in used French barriques—totaling a 36-month maturation. The wine rests for another year in bottle before release, honoring a commitment to restraint, site expression, and time-honored tradition.
