Kitajima Miyosakae Sakahan Futsushu is a commemorative expression from Kitajima Shuzo, a producer with more than 200 years of history along the former Tokaido route in Shiga Prefecture. “Sakahan” was the trade name of the Kitajima family, and this label was recreated to mark the brewery’s 200th anniversary, giving the product a distinctive connection to the family’s heritage. Under the guidance of 14th-generation head brewer Teruhito Kitajima, the producer follows the philosophy that tradition should not simply be preserved but continually evolve, bringing together established craftsmanship and contemporary sensibilities. Water from the Suzuka Mountains, valued for its mineral balance, is used to help draw out the savory character of the rice and shape the finished profile.
