The production of Yuchuan Taiwan 20-Year Cellar-Aged Shaoxing Wine began in 1949. Puli Distillery selects premium glutinous rice, japonica rice, and wheat, using the pure Ailan Spring water unique to the region. The process starts with traditional daqu fermentation: rice and wheat are combined with fermentation starters (qu) to create a rich mash. This is first fermented naturally in ceramic jars using a starter mash (jiu mu), then water is added for main fermentation. The cool, stable climate of Puli provides the ideal environment for low-temperature, slow fermentation, allowing complex amino acids and mellow rice and longan aromas to gradually develop.
After primary fermentation, the wine is sealed in ceramic urns for extended aging, lasting over 20 years. During this long maturation, the wine naturally clarifies and evolves, its color deepening to a pale amber hue while its flavors grow richer and more harmonious. Master blenders later skillfully combine multiple vintages in precise ratios to create a balanced final product. The result is a refined Shaoxing wine with elegant aromas, mellow taste, and the layered depth that only time and craftsmanship can achieve—truly a flagship treasure of Puli Distillery.
玉泉台湾二十年窖藏绍兴酒的酿造始于1949年,当时埔里酒厂选用上等糯米、蓬莱米与小麦,并结合当地甘冽的爱兰泉水发酵。首先使用传统大曲制法,将酒曲与米粮、麦粉等原料混合,用酒母自然发酵,再转入陶瓷甕中完成主发酵。随后注入甘泉水,持续在当地恒温条件下进行低温发酵与窖藏,让酒液在发酵初期形成丰富的氨基酸与桂圆、米香,增添口感层次。
完成初步发酵后,酒液被装入陶瓷缸内封闭陈放,经历超过二十年的时间窖藏,以让酒体逐渐醇化、色泽转为浅琥珀并融合复杂风味。在这漫长陈年过程中,酒师通过勾兑技术,将多种年份酒液按比例调合,以达到香气和谐、口感清爽淡雅的风味表现。最终呈现的玉泉二十年窖藏绍兴酒,兼具风土之韵与岁月沉淀,成为埔里酒厂的旗舰珍品。
Shaoxing Sunrise
40ml Shaoxing wine, 30ml orange juice, 10ml grenadine syrup, Soda water to top, Ice cubes, 1 orange slice for garnish
Shake the Shaoxing wine and orange juice together, then pour into a highball glass filled with ice. Slowly pour the grenadine syrup to allow it to settle at the bottom, creating a sunrise gradient effect. Top with soda water and garnish with an orange slice on the rim.

将绍兴酒与橙汁摇匀后倒入装有冰块的高球杯中。慢慢倒入红石榴糖浆让其自然沉底,形成日出的渐层效果。加入苏打水至满杯,橙片装饰杯缘。
