Karl Kaiser and Donald Ziraldo founded Inniskillin on July 31, 1975. It was the first winery license granted in Ontario, Canada since 1929.
The name Inniskillin is derived from the famous Irish regiment, the Inniskilling Fusiliers, whose Colonel Cooper served in North America during the War of 1812. For his service, Cooper was granted Crown land located in Niagara-on-the-Lake, which he christened Inniskillin Farm.
Karl Kaiser revolutionized Canadian Icewine production when he introduced Inniskillin's first vintage of Vidal Icewine in 1984.
