Chikurin Fukamari Deep Field is crafted by Marumoto, a family-run house founded in 1867 at the foot of the Chikurin mountains in Okayama Prefecture. This is an estate-grown expression made exclusively from Yamada Nishiki cultivated by the producers themselves, following strict ecological principles that prioritize quality over yield. Okayama, known as the “Land of Sunshine,” offers abundant clear days, pristine water, and fertile soils—conditions that support both exceptional agriculture and Japan’s largest astrophysical observatory nearby. Inspired by the region’s connection to time, space, and clarity, sixth-generation leader Niichiro Marumoto created a distinctive solera-like aging approach, blending fresh batches with reserves aged three to eight years to achieve remarkable depth, continuity, and character.
On the palate, this release reveals notes of dried apricot, gentle sea salt, and refined cedar, followed by elegant layers of savory richness that continue to unfold. The profile is balanced yet profound, with a long, composed finish that highlights its sense of maturity and harmony. It can be enjoyed chilled, at room temperature, or gently warmed, and pairs beautifully with grilled fish, roasted meats, or boldly flavored cheeses.
