In 1973, Suntory's second distillery, Hakushu Distillery, was born.
The Hakushu Distillery is located at the foot of Mount Kaikomagatake in the Southern Alps of Japan. The altitude is about 700m. It is the only distillery in the world built in the forest.
This Hakushu was saccharified by high-quality spring water in the Southern Alps for 12 years, and aged in wooden washbacks to allow the lactic acid bacteria into the wash. After fermentation, there's fruity and chestnut notes in the blended wheat juice. The mellow spirit is distilled by a direct fire, and finally aged in American white oak barrels for more than 12 years.
